If you really don’t want to… try the ingredient combination I’ve suggested here, you can try replacing the panettone mousse with one made using plain chocolate.
Of course, because it’s dark and also – because of the balance of flavours – it gives that hint of bitterness we need. You can use the same mix to make chocolate biscuits.
Chef, I have been following you for years and I like your recipes because I can make them too, even though I am not a cook. But where do I find the mould for the “apricot” shape?
