Frittata & bread


Ingredients to serve 4:

For the frittata:
420 g egg
50 ml fresh cream
4 g butter
2 g fine salt


For the bread:
50 g breadcrumbs
5 g butter
1 g fine salt

For the frittata:
Beat the eggs, salt and cream together with a whisk.
Heat a cast iron pan with the butter, add the egg mix and cook in the oven at 200 °C for approx. 10 minutes. Remove from the oven.


For the bread:
Melt the butter in a pan and then add the breadcrumbs and toast until golden. Add salt to taste.
Serve the frittata on plates and serve with the bread.


Note: using a hot cast iron pan, cleaned with coarse salt (as traditionally done), the eggs will not stick to the bottom.
